Vinification: Half of the fruit is pressed straight away and the must begins fermentation in stainless steel, completing the
process in barrique. The remaining half of the fruit is coldmacerated for one night before crushing. It then begins fermentation in stainless steel, like the first batch, and is racked into barriques after tumultuous fermentation. Half-new barriques, lees stirring and partial malolactic fermentation mature the wine for ten months before bottling.

Tasting notes: Intense golden yellow. The nose offers a cocktail of sensations ranging from ripe fruit to vanilla and spice that weave into an intensely pleasurable, pervasive bouquet in which no fragrance predominates. The deep palate unfolds tropical fruit, vanilla and spices.

Pairings: An excellent partner for intensely flavoured rice or pasta dishes and main courses based on fish, mushrooms or white meats. An especially interesting match for legume-based recipes. Excellent with all dishes featuring baccalà (dried cod) or stockfish.
